KINGA VÁCLAV: VARIATIONS ON GÁNICA

The project “Variations on gánica” is based on a local speciality: the recipe for corn „gánica“. The original idea came from Rózsika néni from Dobrohošt’, who detailed her mother’s creativity to feed the whole family efficiently – quickly, easily and cheaply. Corn gánica is a relatively simple and highly variable dish, which was prepared using ingredients that were commonly found in the household, depending on the family’s financial situation. Bacon and cottage cheese was put in when it was, other times just some jam, but in the end the whole family was fed. The project seeks to highlight the contrast between this concept and contemporary gastronomic expectations: it works with a recipe for gánica and prepares it according to the rules of contemporary gastronomic tendencies. The choice of the different types of recipes reflects health problems, different dietary beliefs, the rules of reduction diets, but also, for example, aspects such that these dishes are acceptable for children.
